Ingredients
1 1/2 cups flour
1 tbsp sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup non-dairy milk
1/4 cup applesauce
1 tsp vanilla extract
1 tbsp melted vegan butter or oil
Directions
Preheat a non-stick pan or griddle over medium heat.
Prepare Dry Ingredients: Combine the flour, sugar, baking powder, baking soda, and salt in a small mixing bowl.
Prepare Wet Ingredients: In a large mixing bowl, whisk together non-dairy milk, applesauce, vanilla extract, and melted vegan butter or oil.
Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix; lumps are okay.
Cook Pancakes: Lightly grease the pan if needed. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set.
